I love giving homemade hampers as Christmas gifts and this is a great ‘get ahead’ recipe - as there are never enough hours in the day in December! It is worth investing in a ‘pickle packer’ tool to help making layered jar mixes, it helps pack the layers down tightly.
¾ cup soft brown sugar
½ cup caster sugar
3/4 cup raisins
2 cups oats
1 cup plain flour
1 tsp cinnamon
½ tsp nutmeg
1 tsp bicarbonate of soda
¼ tsp salt
Making the Cookie Mix
Place first four ingredients in a large jar, packing well between each layer. Mix the flour, spices, salt and bicarb together in a bowl, then pack into jar. Seal and decorate your jar – don’t forget to add the baking instructions!
Cooking Instructions
Empty cookie mix into a large bowl and stir to combine.
Add ¾ cup softened butter, 1 egg and 1 tsp vanilla.
Mix together with a wooden spoon.
Shape into walnut sized balls and bake on greased baking trays at 160c for 11-13 mins until golden at the edges.
