Mel’s ‘Good Intentions’ Fruit Loaf.

If you’re anything like us at Dandelion HQ you are trying to be just a little bit healthier after all the Christmas excess! Of course, we all still like a little something sweet and you could do worse than this high fibre loaf. It’s about as simple as cooking gets and easily multiplied if you want to make extra for the freezer. Measurements are in mugs - any mug will do, just stick to the same one for the entire recipe.
1 mug All Bran cereal
1 mug raisins
1 mug milk
2/3 mug caster sugar
1 mug self raising flour
Measure the cereal, raisins, milk and sugar into a bowl. Stir, then pop in the fridge to soak for a few hours, or overnight.
Stir in the flour, then pour into a lined loaf tin. Bake at 150c for an approximately an hour (or until cooked right through).
Serve slices plain or buttered.
