Mel’s Easy Cheesy Scone
I love this scone recipe, it’s super quick to make with no rolling or cutting out. It’s perfect for a picnic, make it in the morning, tie it up in a napkin and you’re good to go!
8 oz Self Raising flour
½ tsp mustard
½ tsp salt
1 tsp baking powder
1 oz butter or margarine
6 oz Cheese (mature cheddar or similar)
Milk
Optional: chives, cooked and diced onion, bacon or sausage
Makes one big cheesy scone to share
- Line a baking tray with a sheet of baking paper and preheat oven to 180c.
- Tip all the dry ingredients into a bowl. Rub in the butter or marg until mixture resembles breadcrumbs. Stir through 5 oz of the cheese (reserving 1oz for sprinking on top) and any of your choice of optional extras.
- Crack the egg into a jug and top up with milk to 5 floz, lightly beat. Stir in the liquid into the cheesy flour and bring together into a ball (add a little extra milk if needed)
- Pop the ball of dough onto your baking tray and pat down into a rough circle (approx 8” across). Sprinkle with remaining cheese and bake for around 25 mins until golden and risen. Cut into wedges and eat the same day (never a problem at Dandelion HQ!)
