Mel’s Cinnamon Swirl Bread

This is the perfect comfort food! As the weather starts to cool down, there’s nothing like the smell of baking to make your home feel cosy. I love this recipe, as it needs very little effort, but makes two cakes, which makes it perfect for gift giving or freezing for another day.
4 cups of plain flour
4 tsp. baking powder
1 tsp. bicarbonate of soda
1½ tsp. salt
1 tbsp. cinnamon
2 cups buttermilk
½ cup vegetable oil
2 cups caster sugar
4 eggs
2 tsp. vanilla essence
For swirl mixture
½ cup caster sugar
2 tbsp. cinnamon
Line two loaf tins. Measure first five (dry) ingredients into a large bowl and stir to
combine. In a separate bowl, mix buttermilk, oil and sugar until combined, gradually beat in eggs and vanilla.Carefully stir the wet ingredients into the flour mixture (do not overwork the batter at this stage). Combine the ‘swirl’ sugar and cinnamon in a small bowl and set aside.
Spoon ¼ of the cake batter in each pan, then sprinkle ¼ cinnamon sugar over the batter. Repeat with another layer of batter and cinnamon sugar in each pan.
Swirl a butter knife through the pans to marble the batter and sugar mixtures.
Bake at 160c for around 50 min. or until it passes the ‘skewer’ test. Pop the kettle on and enjoy!
