Mel's Peach and Pecan Cobbler

This is the time of year that calls for simple comfort food and this recipe is just that! Made from store cupboard ingredients, it is quick to rustle up and goes perfectly with custard or vanilla ice cream – it’s like a cuddle in a bowl!
2 cans of tinned peaches, drained
Sprinkle of cinnamon
½ cup pecan nuts, roughly broken up
1 cup plain flour
1 cup caster sugar
1 tsp baking powder
½ tsp salt
1 egg
½ cup evaporated milk
½ cup melted butter
Grease an oven dish (mine is roughly 10”x 7”) and tip the peaches in. Sprinkle with a little cinnamon and scatter over half of the pecans.
Measure the remaining dry ingredients (except for the pecans) into a bowl and stir to combine. Add the wet ingredients and mix well. Spread over the fruit and sprinkle with remaining pecans.
Bake for 50mins at 160c, until top is cooked through when tested with a skewer. I enjoy mine with warm with custard. Mmm....
