Mel's Granola Recipe

This recipe is a great starter recipe; delicious as it is but also so easy to customise to your taste or special diets. You can upgrade it by adding different nuts and seeds or whatever is lurking in your cupboards. Sprinkle over natural yogurt and fresh fruit for breakfast or stewed fruit and custard for pudding mmm...
Ingredients:
4 cups oats
2 cups pecan nuts, roughly broken up
2 tsp cinnamon
1 tsp nutmeg
1/4 tsp cloves, optional
1/3 cup soft brown sugar, packed
1/2 cup runny honey
1/2 cup vegetable oil
Measure all the dry ingredients into a large bowl. Add honey and oil and stir well to combine.
Spread mixture out onto two non-stick baking trays. Bake for 20 mins at 180c, stirring halfway through. Leave to cool completely before storing in pretty jars or tins.
