Mel's Chewy Oat Slice

This is a lovely quick and easy recipe for when you are short of time and great for clearing out those odds and ends in your baking cupboard. You could add chopped nuts, raisins or snipped apricots or different cereals, whatever you need to use up. A perfect lunchbox treat!
2 cups cornflakes
1¾ cups oats
1¾ cups desiccated coconut
1¼ cups caster sugar
6½ oz butter
3 tbsp honey
Measure all the dry ingredients into a large bowl and stir to combine.
Melt the butter and honey together in a pan then pour the liquid over the dry mix and mix until thoroughly blended.
Tip mixture into a lined 13” x 9” baking tray and flatten (I use a potato masher for this)!
Bake for 20 mins at 160c until golden.
Leave to cool for five minutes, then carefully cut into slices, before cooling completely in the tin.
